INGREDIENTES

  • 16 ramitas de apio
  • para la crema de anchoas
  • 150 gr de queso philadelphia
  • 8 anchoas en aceite (para la pasta de anchoa)
  • 1/2 cebollita pequeña
  • ralladura de limón
  • 4 filetes de anchoas (para decorar)
  • para el de tartar y pimienta verde
  • una cucharadita bien colmada de pimienta verde
  • 150 gr de carne de ternera picada reciente (sólo utilizar carne recién picada)
  • 1 cebollita picada finamente
  • pimienta
  • 1 huevo
  • perejil picado
  • crema de pistacho
  • 150 gr de queso philadelphia
  • 2 cucharas soperas de pistachos picados
  • 1 trozo de jengibre rallado
  • 1 cuchara sopera de vino de jerez
  • pistachos para decorar
  • crema de gorgonzola
  • 150 gr de gorgonzola o queso azul
  • 75 gr de mantequilla blanda
  • pimienta
  • 1 cuchara sopera de vino de jerez
  • una pizca de sal
  • opcional para acompañar
  • 2 huevos duros picados

PREPARACIÓN
Crema de anchoa
Trituramos 8 anchoas con un poco de aceite. Batimos el queso, añadimos la pasta de anchoas. Picamos la cebollita finamente y la añadimos junto con la ralladura de limón y la pimienta a lo anterior. Llenamos una manga pastelera con el preparado y llenamos 4 ramas. Decoramos cada rama con una anchoa.

Tatar de pimienta verde
Picamos la cebollita finamente. Guardamos unos granos de pimienta para decorar, el resto lo picamos. Añadimos a la carne el huevo, el perejil, la sal, la pimienta picada y amasamos.
Rellenamos 4 ramas y decoramos con unos granos de pimienta verde.

Crema de pistacho
Batimos el queso, pelamos y picamos los pistachos y el jengibre, añadimos al queso junto con el vino de jerez. Llenamos con la manga pastelera 4 ramas y decoramos con unos pistachos.

Crema de gorgonzola
Aplastamos el gorgonzola con un tenedor, pasamos por un colador. Batimos la mantequilla y mezclamos con el queso. Añadimos sal, pimienta y el vino de jerez. Removemos y llenamos con la manga pastelera las ramas.

Montaje
Decorar con hojas de berro y acompañar con huevo picado.
