- para los pinchos
- 400 gr de rape
- 400 gr de salmón
- romero
- unos tomates cherry
- sal
- pimienta
- aire de zanahoria
- 300gr de zanahorias
- 1 cuchara sopera de lecitina de soja
Los pinchos
Lavamos las verduras y el pescado y los cortamos a tacos iguales.
Colocamos intercalando los tomates cherry y el pescado en los pinchos, espolvoreamos con romero y salpimentamos.
Freímos en una sartén.
El aire de zanahoria
Pelamos y licuamos los zanahorias. Llenamos un vaso alto con el zumo de zanahoria, añadimos la lecetina, emulsiamos con el minipimer accionando en la parte superior del vaso para así introducir la máxima cantidad de aire y formar una espuma volátil. A estas espumas se les llama aire.
